Subject: [PATCH] fix(app): build iOS releases with the foldable-capable SDK
 (#7705)

EAS auto selects Xcode 26.6 for Expo 57, leaving releases in phone compatibility mode despite scene support. Pin Xcode 27.1 for the native resizing opt-in.
